In Piacenza (ER), sparkling wines traditionally undergo second fermentation in bottle in spring, thanks to native yeasts and the fructose turns into carbon dioxide and alcohol.

Grape variety:100% Malvasia di Candia Aromatica
Production area: Ziano Piacentino (PC) EMILIA ROMAGNA 

Vinification:
The cold contact with the skins is minimal to highlight the fresh aromatic notes of the variety.
The wine is bottled maintaining its natural yeast from the lees.
The analysis of these gives more complexity and finesse to the wine.
The flavour is accompanied by a delicate but tense acidity.
Alcohol content: 11.5% vol.
Colour: Pale straw yellow
Tasting suggestion:
Shake the bottle to put the natural yeast deposit in suspension before opening
Food matching:
Particularly suitable with coldcuts, vegetables in batter, fried fish , quiche with cheese and herbs
